Every morning, before the restaurant comes to life, some of us are already among the stalls of Milan's market. Amidst the scent of basil, crates full of fruit, the voices of fishmongers, and the tales of farmers.

That's where LùBar begins, every day.

We don't choose from a catalog, we don't follow a pre-established order. We choose live, with our eyes, with our hands, with our hearts. We look for what is in its perfect moment: tomatoes still warm from the sun, fish that arrived at dawn, herbs light with dew.

It's a slow gesture, made of presence and attention. A handcrafted gesture that takes time, but always brings us back to the essentials.

At the market, we learn the rhythm of the seasons, the measure of simple things.
That's where our dishes are born, not in a trendy kitchen, but in a crate of ripe figs, in a pumpkin that cannot be left behind, in a shared look with those who truly cultivate.
